Treat yourself this Christmas to the traditional mouthwatering dish of a fine and succulent goose from the remote and wild county of Caithness in Scotland.
This is a land of wide skies and rolling pastures, where the summer days are long and the grass grows green as emerald. This is the home of the traditional Goose, fattened for the Christmas feasts since time immemorial.
Farming practices have changed little in the uplands of Caithness, and the ancient rotational patterns are still maintained, working with the seasons, unhurried, and untouched by spray or chemical.
The geese graze upon the rich grass growing lush in the long hours of the day, and when the binder has reaped the harvest, are fattened on the fallen oats amongst the stubbles, giving them a wholesome richness and flavour unmatched by modern grains.
We include a recipe card to help you get the very best out of your goose, and the delicious fat which is so excellent for the roast potatoes.
